杜磊,副教授,华东理工大学生物工程学院硕士生导师。2016年毕业于东京海洋大学,获应用生命科学专业博士学位。同年入职深圳大学材料学院从事博士后研究工作,合作导师Florian J. Stadler。2019年入职华东理工大学生物工程学院食品科学与工程系。先后主持国家自然科学基金青年基金、上海市自然科学基金面上项目、微生物技术国家重点实验室(山东大学)开放课题和多项企业横向课题等科研项目。在Food Hydrocoll、Carbohyr Polym、Mol Nutri Food Res、Process Biochem、J Rheology等杂志发表相关研究论文35篇。Polymers杂志客座编辑,Food and Health青年编委。
研究方向:
1. 食品亲水胶体
基于多糖、蛋白等食品亲水胶体的物性表征,研究其在功能性食品、益生菌及功能生物材料等领域的应用。
2. 生物活性肽
基于深度学习的生物活性肽高通量筛选和生物制造,开发功能生物活性肽产品。
3. 益生菌
功能益生菌发掘、高密度发酵及冻干保护剂开发。
