赵梦瑶


食品科学专业:硕士生导师

 

博士,特聘副研究员,2018年入选上海市浦江人才”A类计划。博士毕业于中国农业大学食品科学与工程专业,博士期间于加拿大渥太华大学食品安全与毒理学系联合培养两年,于毕业同年入职。

主要致力于食品营养与安全领域的研究,包括食品功能因子的生理活性评价、食源性热加工有害物毒理及安全性评价等。在该领域发表研究论文25篇(SCI论文20篇,JCR Q1 15 篇),其中以第一作者在Food Chem., J. Agric. Food Chem., Food Funct., J. Funct. FoodsSCI期刊发表论文13篇。近年来主持多项包括国家自然科学基金青年基金、上海市浦江人才计划、国家重点研发计划子课题等在内的多个省部级项目、人才计划。

1. 国家自然科学基金青年基金(31801668),食源性有害物丙烯酰胺通过NLRP3炎症小体激活介导神经毒性的机制探索2019-2021,主持;

2. 上海市浦江人才计划A类(18PJ1401900),“NLRP3炎症小体介导的细胞焦亡在食源性有害物丙烯酰胺神经致毒中的机制研究2018-2020,主持;

3. 国家重点研发计划子课题,“水产品智能化加工装备与关键技术”,2019-2022,子课题主持;

4. 中国博士后科学基金特别资助(2019T120314),单一聚合度壳寡糖对非酒精性脂肪肝的干预效果及机制研究2019-2020,主持;
